Words of affirmation and gratitude speak really loudly to some, while actions speak louder than words for others. I hope that you were able to convey your gratitude in the letters you wrote last week.
The challenge this week is to put your words into action, and do something kind for someone. This could be a simple act of kindness like doing the dishes for your spouse, or a bigger act of service such as spending an evening volunteering at the food bank after work. Whatever you choose to do, let your actions speak for themselves.

Do you think you can’t enjoy good flavor while prioritizing healthy eating? Think again! This cauliflower “mac and cheese” is delicious, decadent, and easy to make.
You’ll need:
- One head of cauliflower
- Salt and pepper to taste
- ¼ cup sour cream or Greek yogurt
- ½ cup shredded cheddar cheese
- Cut the cauliflower into small florets.
- Boil the cauliflower for about 5 minutes.
- Drain and return to the pot in the low heat setting.
- Add salt, pepper, and sour cream/Greek yogurt and stir until combined.
- Stir in the cheese until melted.
- Garnish with fresh parsley and enjoy!
